How to make delicious tasty spicy Baigan Bharta / Spicy Brinjal vegetale - Indian dish - Indian Food
Baigan Bharta is one of the most popular dishes in winter. It is fun to eat with bread. I have brought here a little different way which looks very tasty.

500 gms Brinjal / Baigan for Bharta
250 gms green onion (chopped)
1/4 cup green garlic (finely chopped)
1 cup tomato (finely chopped)
1 tbsp Ginger-Garlic Paste (Dried Garlic)
2 tablespoons oil
Pinch hing
Salt to taste
Half a lemon
1/2 turmeric
2 tablespoons chili
1 tablespoon coriander powder
1/2 cup coriander
Method: -
Peel a brinjal, chop it like chips in bowl filled with water

Half a lemon
1/2 turmeric
2 tablespoons chili
1 tablespoon coriander powder
1/2 cup coriander
Method: -
Peel a brinjal, chop it like chips in bowl filled with water
Then put 2 tbsp oil in a thick bottomed pan and when the oil is hot, add chopped Brinjal / Baigan.
then put the Pan on the bottom. Cover the dish with something and pour some water on the dish and let it get some heat slowly.
Check and shake every now and then.
Once the Brinjal / Baigan is cooked, mash it well.
Then heat a teaspoon of oil in a pan and fry the hing / asafetida , green garlic, ginger garlic paste in it
Then add tomatoes and cover the pan and let the tomatoes get heat.
Then add the mashed Brinjal / Baigan and mix well.
when the oil gets separated from it, add lemon and coriander and take it off.
And serve it with roti, jaggery, spicy, garlic sauce, onion, Buttermilk green garlic all together.
